Sencha is the most commonly consumed green tea in Japan, accounting for approximately 70% of the total amount distributed in Japan. Because the tea leaves are exposed to plenty of sunlight and grow thick, they are characterized by their deep green color and deep, mellow aroma.
Among them, organic tea accounts especially for only 4% of domestic production.
This extremely valuable tea also makes a great gift.
The Blend and Manufacturing Method
Tea experts carefully assess the quality of tea leaves every year. We mainly use the first harvest varieties of "Yabukita" and "Saemidori".

Cold Brew Sencha gives It a Mellow Taste
Cold Brew makes it difficult to extract bitter and astringent ingredients and caffeine. Furthermore, vitamin C is not destroyed by heat.
Add 3g of tea leaves (1 heaped tsp) to 100ml of water and brew in the refrigerator for 1 hour. If you are making a large batch, please brew for 3-6 hours.

It's a room temperature 1st Brew. 15 minutes steep time. The theamine is a rich fortifying prep. This wakes up your morning senses; then there are the 2nd, and third, steepings. Using a temp that is a warmer 10sec steep. My third steep is hotter. This is a sit down and relax time. The tea leaves are now like butter fly wings so do not cook with a high temperature steep. Theamine or B1 has been called the happiness vitamin. It is temperature sensitive hence the progressive increments in cold, warm and hotter. I know it sounds like a lot of fuss but this half hour or less is an investment in your feeling good, before the day!

A good Sencha but, of course, at that price it's not top notch. However, it's a great go-to green tea for daily use – it has an agreeable flavour, a light jade-green colouring, and it yields up to three steeps (2 tsp per cup, add water 5 minutes after boiling, steep 1 min., 1:30 min., 2:30 min. respectively) per brew. Recommended!

I ordered a very nice sencha tea, also by Yamasan before "Fukamushi Sencha 80g bag) and it was delicious. I'm not sure if I misunderstood what sencha is, but this also claims to be a sencha tea, in fact it's also by Yamasan, which is why I was shocked to see the tea full of bright beigy colored twigs and leaf stems, compared to the other tea, which smelled rich and beautiful, the smell of this stuff literally reminded me of hay.
Since then I've seen teas in Japan like this, also with a hay-like smell, maybe it's intentional and maybe people like it, but I still don't understand what distinguishes this "sencha" from the other one I bought, which was much, MUCH better!!!
