Care instructions: Usually, brushing out is sufficient between uses. For washing: hand wash gently in cold water, hang to dry.
Usage Steps for You
Flour the Proofing Basket
Generously dust the inside of the proofing basket with flour, typically using a combination of all-purpose flour and rice flour to prevent sticking. Make sure the flour is evenly distributed and covers the entire surface.
Place the Shaped Dough in the Basket
Carefully transfer the shaped dough, seam side down, into the floured proofing basket. Center the dough to allow for even rising and shaping within the basket. Cover the proofing basket with the linen liner or a clean kitchen towel to prevent the dough from drying out.
Allow for Final Proofing
Let the dough undergo its final proofing stage in the basket for the recommended time, allowing it to rise and develop flavor. When ready, gently turn the dough out of the proofing basket onto a baking surface or into a preheated Dutch oven for baking. Caution! Do not place the bread basket inside the oven.
Score the Dough
Just before baking, use the bread scoring lame to make shallow, decorative cuts (scores) on the surface of the dough. The scoring serves multiple purposes, including controlling the expansion of the dough during baking, allowing the bread to expand in an aesthetically pleasing manner, and influencing the final texture.
