We never use sorry scraps in our balm. Instead, we start with suet—the finer inner fat. Then, without using water or excessive heat, we render the fat, protecting it from oxidation or rancidity.

We procure our oil from Olea Estates, a certified organic olive tree farm run by the Chronis family in Greece since 1856.
